I like your letterpress approach. I do something similar, but it doesn't look as convincing as yours, so I'll probably be using the values you suggested. For generating texture, I simply use Filter > Noise > Add Noise. Then I use 1.2% for the amount, Gaussian Distribution and Monochromatic.
